Dave's Spicy Peanut Soup



Ingredients:

* 2 tsp oil
* 1 large onion, chopped
* 2 garlic cloves, crushed
* 1 tsp mild chili powder
* 2 red peppers, seeded/chopped
* 8oz carrots, chopped
* 8oz potatoes, chopped
* 3 celery sticks, sliced
* 3 3/4 cup veg stock
* 6 tbsp of crunchy peanut butter
* 2/3 cup corn
* Salt & pepper
* Chopped peanuts, garnish

Note: this could be served with some shredded chicken. So if you want to do that, you better buy some chicken.

Method:

1. Cook onion & garlic in oil, for 3 mins. Add chili powder & cook for 1 minute.

2. Add red peppers, carrots, potatoes & celery. Stir. Cook for 4 mins.

3. Add veg stock, peanut butter & corn. Stir.

4. Season well. Bring to boil, cover/simmer 20 mins until veg are tender.

Comments:

* Soup is really hearty, for bigger peanut taste, add more PB.
* For bigger kick, and bigger meal, add shredded chicken and a jalepino.

Grilled Chicken and Mango Kabobs



Ingredients:

* 1 tsp (5 ml) grated lime rind
* 1/4 cup (50 ml) lime juice
* 2 tbsp (25 ml) vegetable oil
* 3 cloves garlic, minced
* 2 tsp (10 ml) chili powder
* 1/2 tsp (2 ml) salt
* 1/4 tsp (1 ml) cayenne pepper
* 2 boneless skinless chicken breasts, 1 lb (500 g) total
* 2 tsp (10 ml) liquid honey
* 2 mangoes
* 1 sweet red pepper

Method:

1. In small bowl, whisk together lime rind and juice, oil, garlic, chili powder, salt and cayenne pepper.

2. Cut chicken into 1-inch (2.5-cm) cubes; place in separate bowl. Pour half of the marinade over top and toss to coat; let stand for 20 minutes. Stir honey into remaining marinade; set aside.

3. Cut off mango flesh from each side of pit. Cut grid pattern of 3/4-inch (2-cm) squares in flesh of each side down to (but not through) skin. Gently push skin to turn inside out; cut off flesh. Chop any flesh left on pit.

4. Dice red pepper into 3/4-inch (2-cm) pieces. Onto each of 4 long or 8 short skewers, alternately thread mango and red pepper pieces; brush with half of the reserved honey marinade.

5a. Thread chicken on to skewers. (i.e. you are creating skewers with only chicken on them)

5b. Alternately thread mango & red peppers together on to skewers. (i.e you are creating more skewers with only fruit & veg on them)

6. Place all kabobs on greased grill over medium-high heat; close lid and grill, turning and basting chicken once with remaining honey marinade until fruit is softened and chicken is no longer pink inside (about 8 minutes).

Comments:

* Shockingly good... the mango becomes super sweet with the heat.
* Note: fruit and veg will shrink when on the grill... so plan accordingly.
